onion, chopped 11 oz. cups
garlic, peeled, minced tbsp.
green pepper, diced 10 oz. cups
zucchini, diced 9 oz. cups
paprika, smoked tbsp.
chili powder tbsp.
1.  To sauté vegetables, in kettle heat oil over medium-high heat:
  • Add onion and sauté 4 minutes or until tender.
  • Stir in garlic and continue to sauté 3 minutes.
  • Stir in peppers, zucchini, paprika and chili powder. Continue to cook, stirring often, for 3 minutes.

no salt added diced tomatoes, undrained 24 oz. cups
low sodium black beans, canned, rinsed, drained 25 oz. cups
frozen whole kernel corn 14 oz. cups
cooked diced chicken 10 oz. cups
2. Pour in Swanson’s No-Salt Chicken Broth and tomatoes. Bring to a boil; simmer for 15 minutes.

3. Stir in beans, corn and chicken. Return to a simmer; cook 15 minutes more.

cilantro, minced 2 oz. cups
lime juice tbsp.
lime zest tbsp.
4. Just before serving, stir in ground tortilla chips, cilantro, lime juice and zest.

CCP- Heat to a minimum internal temperature of 165°F for one (1) minute.

CCP- Hold for hot service at 140°F.

5. To Serve: Using an 8 oz ladle, portion 1 cup soup.
