1. Soak beans in water (not listed) overnight in refrigerator. Allow enough room in container for beans to expand.

CCP: Hold at internal temperature of 40°F or below for use.

2. Drain and discard excess liquid.

water 24  cups
dried oregano leaves 5 1/2  tsp.
cumin, ground 7 1/2  tsp.
ground cinnamon, ground tsp.
ground coriander 2 1/4  tsp.
bay leaf, individual leaf(ves) 3 1/2  ea.
3. In a stock pot or kettle, combine beans, Campbell's® Signature Low Sodium Chicken Culinary Foundation, oregano, cumin, cinnamon, coriander and bay leaves. Bring to a boil. Reduce heat. Simmer for 1 hour, or until beans are almost tender.

4. In a skillet, sauté bacon until crisp. Remove cooked bacon, leaving grease in the pan.

red onion, diced 1/4-inch 30 oz. 5 1/4  cups
garlic, minced 3 oz. 667/1000  cups
green pepper, diced 1/4-inch 13 oz. 2 1/2  cups
5. Add onion, garlic and green pepper to bacon grease. Sauté for 5 minutes, or until soft.

6. Add bacon and vegetables to soup. Simmer for 1 hour, or until beans are tender.

CCP: Heat to a minimum internal temperature of 165°F for 1 minute.

cilantro, chopped 0 oz. 1/2  cups
red wine vinegar fl oz.
hot pepper sauce tsp.
7. Stir in pepper, chili powder, cilantro, vinegar and hot pepper sauce.

CCP: Hold for hot service at 140°F or higher until needed.

NOTE: Remove all bay leaves before use.

8. To Serve: Using an 8 oz. ladle, portion 1 cup soup into bowl.
