Tip

May substitute dry pinto beans for canned. If using dry, soak in water overnight. Drain and place in a rondeau pot and cover with water; cook on a soft boil, be careful not to boil too much. Once cooked (can take up to 4 hours), drain and salt beans and hold hot.

Serve with grilled or toasted bread or tortillas.

1.  Heat the pinto beans and hold hot.

chorizo sausage, diced 48 oz. cups
crushed red pepper tbsp.

2.  In a saute pan, heat oil.  Once the oil is hot, add the onions, cumin, and garlic and cook until soft, stirring constantly.

3. Add chorizo and red pepper flakes to the onions and garlic and stir until cooked. 
 








             

4.  Add the PACE® Picante Sauce and simmer for about 15 minutes.

5.  Combine the chorizo mixture and beans, and transfer to a 2-1/2" deep full sized steamtable pan. Use the back of a spoon to make 48 depressions for the eggs (make depressions in a 6 x 8 array).

6. Crack one egg into each depression and bake in a  400 degree F oven until the whites are set, but the yolks are still runny.

7.  Sprinkle cheese, cilantro, and pepper over the finished dish.  Serve immediately.  One serving = 1 egg + 1/2 cup bean/sausage/sauce mixture.
