1. In a large saucepot cook beef, onions, and chili powder. Cook until beef is browned. Drain fat.

shredded Cheddar Jack cheese 2 lb. qt.
2. Add soup and cheese. Stir occasionally.

white bread dough 25 lb.
3. Preheat oven to 350º F. Portion dough into 100 pieces (4 oz each). Roll each piece into 6-inch circle. Using No. 8 scoop (about 1/2 cup) place meat mixture on dough. Fold dough in half over meat. Pinch edges together.

4. Place 10 calzones on each oiled sheet pan. CCP: Bake until internal temperature is 165º F. or higher for 15 seconds and calzones are browned, about 20 minutes. CCP: Hold at 140º F. or higher. Portion 1 calzone. Serve with Pace® Chunky Salsa for dipping if desired.
