Tip

For Turkey Meatloaf Smothered with Mushroom Gravy, prepare recipe as directed, except in step 6, add sauteed or sliced, canned, drained mushrooms to consommé and soup blend. Serve ladled over prepared meatloaf.

frozen liquid egg 4 lb. 7 1/2  cups
bread crumbs, dry, plain 2 lb. 2 1/2  qt.
poultry seasoning tbsp.
99% fat free ground turkey 30 lb.
1. Preheat convection oven to 325°F.

2. In large mixing bowl, combine 2½ cans soup, eggs, bread crumbs and poultry seasoning with wire whip. Add ground turkey; blend well.

3. Line ten each 9 x 5 loaf pans with aluminum foil; spray lightly with cooking spray.

4. Form loaves about 4 lb. 4 oz. in each pan.

5. In saucepan, combine consommé and ½ can reserved soup. CCP: Heat until internal temperature is 165°F or higher for 15 seconds, stirring occasionally.

6. Brush top of each meatloaf with 2 tbsp. (1/2 oz.) of mixture. CCP: Bake at 325°F for 65 minutes until internal temperature is 180°F or higher for 15 seconds.

7. Remove meat loaf from pans; drain. Cut each into 10 equal portions.

8. CCP: Hold at 140°F or higher. Portion 1 slice (6 oz.) with 1½ tbsp. reserved sauce. For added variety, meat loaf recipe can be prepared with ground chicken or lean ground beef. The signature consommé and soup glaze (Step 5) offers a flavorful topping for mashed potatoes, rice or dressing.
