sugar 18 oz. 2 1/2  cups
cider vinegar 32 oz. qt.
vegetable oil cups
yellow mustard 2 oz. 1/4  cups
black pepper tsp.
chile de arbol powder 1/4  cups
cumin tsp.
dried oregano leaves 1/4  cups
basil leaves, dried, crushed 1/4  cups
garlic powder tbsp.
dried parsley flakes 1/4  cups
1. In large bowl mix soup, sugar, vinegar, oil, mustard, pepper, chili powder, cumin, oregano, basil, garlic powder and parsley. Reserve 3 qt. plus 1 cup. Store covered in refrigerator.

CCP: Hold for cold service at 41°F until needed.

2. Pour remaining soup mixture over chicken. Store covered in refrigerator overnight.

3. Remove chicken from marinade. Discard marinade. Lightly oil 2 sheet pans (26x18x1). Place chicken on sheet pans. Bake at 350º F.

CCP: Heat to a minimum internal temperature of 165°F for 1 minute.

4. To make sauce: In saucepot heat reserved soup mixture.

5. To Serve: Using tongs, plate 1 chicken breast onto plate.  Using a 2 oz., ladle, portion 1/4 cup sauce over chicken. Garnish with green onions. Serve immediately.
