romaine lettuce 23 oz. 14  cups
mango 72 oz. 12  cups
avocado 2 lb. cups
Instructions
1. In medium bowl whisk together juice, vinegar, mustard, garlic and pepper.
2. Slowly whisk in oil until thickened and smooth. Adjust seasonings with salt. Cover. CCP: Refrigerate below 40°F hold dressing at least 2 hours before using as directed.
3. For Each Serving: Serve 1 cup greens on a chilled salad plate topped with 1/2 cup mango and 1/4 cup avocado slices. Drizzle with 2 Tbsp. Açai dressing before serving.
Ingredient Options: Other vegetables and fruits may be used in addition or instead of those listed including: mixed greens, baby spinach, pineapple chunks, orange sections, cucumber slices, papaya slices, cherry tomato halves, steamed asparagus, sliced baby new potatoes, etc. Or serve accompanied by grilled chicken, shrimp, scallops or fish.*Substitutions: V8 V-Fusion® Peach Mango, Pomegranate Blueberry or Strawberry Banana
