1. Heat oil in large saute pan or tilt skillet. Add chicken and cook until browned. Remove chicken.

2. Add rice and cook 30 seconds, stirring constantly. Add vegetable juice, cumin and chili powder. Heat to boiling. Top with chicken. Cover and simmer 15 minutes.

black beans, #10, rinsed, drained 65 oz. cans
Cheddar cheese, shredded 12 oz. cups
3. Add beans and sprinkle with cheese. Cover and cook 5 minutes or until heated through and cheese melts.

CCP: Heat until internal temperature is 165°F. or higher for 15 seconds.

CCP: Hold at 140°F. or higher. Portion using 1-1/4 cups rice mixture and 1 chicken breast half.
