water 24  cups
reduced sodium soy sauce tbsp.
miso 1/4  cups
kosher salt tsp.
sugar 1 oz. 1/8  cups
orange zest, finely grated 1 oz. tsp.
1.To prepare broth:
  • In medium pot or kettle, add Campbell's Signature Low Sodium Chicken Culinary Foundation and water. Bring to a simmer.
  • Add soy sauce, miso, salt, sugar, and orange zest. Stir for 30 seconds. Reserve.
CCP: Heat to a minimum internal temperature of 165°F for 1 minute.

CCP: Hold for hot service at 140°F or higher.

garlic, minced 2 oz. 1/2  cups
ginger root, peeled, minced 1 oz. 1/8  cups
ground pork 13 oz.
carrot, shredded 11 oz. cups
cauliflower, chopped 16 oz. 4 1/4  cups
green cabbage, shredded 8 oz. 2 1/2  cups
2. To prepare pork and vegetables:
  • Heat pan on low. Add oil, garlic, ginger and pork. Cook and stir for 4 minutes.
  • Add carrots, cauliflower and cabbage. Cook for 4 minutes.
CCP: Heat to a minimum internal temperature of 165°F for 1 minute.
 
CCP: Hold for hot service at 140°F or higher.

cooked Ramen noodles 75 oz. 12 1/2  cups
fresh bean sprouts 23 oz. 6 1/4  cups
sesame oil 3 1/4  tsp.
green onion, finely chopped 1 oz. 1/4  cups
3. To assemble, portion the following into the bottom of a 20 oz. bowl.
  • #8 scoop, 1/2 cup noodles
  • #8 scoops, 1/2 cup pork and vegetable mixture
  • #8 scoop, 1/2 cup bean sprouts
4. Using a 12 oz. ladle, top with 10 oz. (1 cup) prepared broth. 

5. To garnish, drizzle with sesame oil and a pinch of green onion. Serve immediately.
