tortilla chips 12 oz. qt.
Monterey Jack cheese 3 lb. qt.
all-purpose flour
egg 40  ea.
half and half cups
tomato qt.
Instructions
1. Crumble chips and spread in bottom of 2 full hotel pans. Toss cheese with some flour in a large bowl.
2. Add salsa, eggs and half-and-half to cheese mixture; mix well. Pour half of salsa mixture into each hotel pan.

3. Bake at 350º F. (conventional oven) for 20 to 25 minutes. Remove from oven. Let stand 10 minutes.
4. Mix salsa base and tomatoes in saucepan. Heat through. CCP: Heat to 140º F. or higher for 15 seconds. Hold at 140º F. or higher.

5. Cut frittata in each hotel pan into 12 squares. CCP: Hold at 140º F. or higher. Portion 1 frittata square plus 1/3 cup sauce.
