To prepare Shoyu Ramen Chicken Soup Base:

1.  In large pot add the first 11 ingredients. Simmer for 60 minutes.

CCP: Heat to 165°F for 1 minute.
CCP: Hold for hot service at 140°F or higher until needed.
Weight Measure
cooked pulled pork 8 lb.
hard cooked egg, large, peeled, sliced in half 16  ea.
seaweed (nori) 1 lb.
shiitake mushrooms, sliced 2 lb. gallons
green onion, chiffanade 7 oz. cups
Thai chili pepper, chiffanade tsp.
cilantro, chopped tsp.
Thai basil, chiffonade tsp.
lime, cut into 4 wedges ea.
radish, sliced 2 lb. cups
2.  Prepare remaining ingredients as indicated.

3.  To serve, place ingredients into each bowl:
4 oz. pork
1/2 . egg
1/2 oz. seaweed
2 oz. mushrooms
1 tbsp. onions
1/4 tsp. pepper
1/4 tsp. cilantro
1/4 tsp. basil
1 wedge lime
1 oz. radish

3. Using an 8 oz. ladle, top with 1 cup of Shoyo Ramen Chicken Soup Base.

CCP: Hold for hot service at 140°F or higher until needed.
