1. Sauté onion, pepper and garlic in hot oil in large pan until tender and lightly browned, about 10 minutes.

red wine vinegar 1/2  cups
2. Add pimento, tomato sauce, salsa base and vinegar; cook 10 more minutes. Cover and refrigerate.

CCP: Hold at 40°F. or lower.

Portion using #16 scoop (1/4 cup).

Serving Suggestions: Use as a flavoring for soups, sauces and marinades, or as a tropical rub for grilled, broiled or roasted meats and poultry.
