|kidney beans||15 oz.|
|diced tomatoes||1 cup|
|water||1 1/2 cups|
|cooked boneless, skinless chicken breast||2 cups|
|processed American cheese food product||8 oz.|
|1. Combine all ingredients in large saucepot. Heat to a boil. Reduce heat and simmer for 45 minutes. Tortilla chips will thicken soup.
2. If soup is too thick, stir in additional water. CCP: Heat until temperature is 165°F. or higher for 15 seconds. CCP: Hold at 140°F. or higher. Portion using 8-oz. ladle (1 cup). Garnish Suggestion: Chopped cilantro *Cooked, cubed beef or turkey can be substituted for chicken.
