1. In pot heat oil over medium heat; add onion and sauté 3 minutes. Stir in carrots, cover, reduce heat and cook 5 minutes.

2. Add soup and water and bring to a boil, mix until smooth and simmer 8 minutes.

pearl barley, cooked, drained cups
3. Stir in barley and return to a simmer.

fresh dill weed, minced 0 1/2  cups
black pepper, ground 1 1/2  tsp.
fresh dill weed, individual sprigs 16  ea.
4. Add dill and pepper. Heat until internal temperature is 165º F. or higher for 15 seconds. CCP: Hold at 140º F. or higher.

5. Garnish each serving with 1 sprig of fresh dill.
