olive oil tbsp.
onion cups
garlic tbsp.
water cups
spinach 18 oz.
lemon juice tbsp.
lemon zest tbsp.
Italian seasoning tbsp.
ground red pepper 0 1/4  tsp.
1. In a soup pot, heat oil over medium heat; add onion and sauté 3 minutes. Stir in garlic and continue to cook 2 minutes.
2. Add soup and water and bring to a boil; reduce heat and simmer 10 minutes.
3. Stir in spinach, juice, zest and spices and simmer 5 minutes. Heat until internal temperature is 165º F. or higher for 15 seconds. CCP: Hold at 140º F. or higher.
