This decadent tortellini dish combines flavors from Campbell's® Reserve Cream of Tomato with Roasted Red Peppers Soup, cheese tortellini, fresh cherry tomatoes, spinach and Parmesan cheese.  Perfect to add variety to any menu with a taste of Italian fare!

Campbell's® Reserve Cream of Tomato with Roasted Red Pepper
48 oz.
olive oil 0 3/4  cups
cherry tomatoes 16 oz. cups
spinach 12 oz. 18  cups
Parmesan cheese 1 1/2  cups
cheese tortellini 3 lb. 12  cups
Instructions
1.  Heat oil in sauté pan over medium high heat. Add tomatoes and cook until blistered, about 3 minutes.
2.  Add soup, spinach and half of the cheese. Bring to a simmer.
3.  Add cooked tortellini and simmer for 2 minutes. Garnish with remaining cheese.

Recipe Tip

  1. A variety of pastas work great with this recipe including penne, rigatoni, and cavatappi.
  2. Fold in fresh herbs such as basil or tarragon for additional flavor.
