lobster mac & cheese

A creamy decadent lobster sauce made with Campbell's® Culinary Reserve Lobster Bisque with Sherry, tender chunks of lobster baked together with pasta, and topped with panko and scallions. This indulgent Lobster Mac & Cheese is the ultimate comfort food.

Ingredient Weight Measure
panko 3.000 oz. 1.25 cup
butter , melted 2.000 oz. 4 tbsp.
corkscrew pasta , dry 14.000 oz. 4.5 cup
canola oil 2 tbsp.
onion , diced 1/4-inch 7.000 oz. 1.333 cup
Campbell's® Culinary Reserve Lobster Bisque with Sherry , 4 lb pouch 1 ea.
Parmesan cheese , grated 4.000 oz. 1.25 cup
kosher salt 1.5 tsp.
black pepper 0.25 tsp.
cooked lobster meat , tail, diced 16.000 oz. 0
sour cream , ounce 4.000 oz. 0.5 cup
chives , bunch 1 bunch
1.  In a small mixing bowl, combine panko and melted butter. Mix thoroughly.  Place mixture on baking sheet and bake in 350°F oven until brown, about 5 minutes. Reserve.
2.  Cook pasta according to package directions (until al dente, about 8-9 minutes).  Let cool.  Lightly oil (1 tsp). Reserve.
3.  Using a large sauce pot over medium heat, add canola oil.  Add onions and cook until lightly browned, about 5-6 minutes.

4.  Add Campbell's® Culinary Reserve Lobster Bisque with Sherry​. Simmer for 5 minutes on low heat. Add cheese, salt and pepper.  Continue to simmer for 5 minutes.
5.  Using a large mixing bowl, combine the cooked pasta, lobster meat, sour cream and scallions.  Mix thoroughly.

6.  Lightly oil a hotel pan.  Add mixture and bake uncovered for 15-18 minutes in 350°F oven.

7.  Add toasted panko and bake for an additional 5 minutes. 

CCP: Heat to a minimum internal temperature of 165°F for 1 minute.
CCP: Hold for hot service at 140°F or higher until needed.


To Serve:
Using a #8 scoop, portion 1/2 cup into a serving bowl.  Garnish with chives.  Serve immediately.
